Absolutely! This is how it used to be done and this is how you can do it at home too. I absolutely love making it the old fashioned way without a pasta machine roller; it's so therapeutic.

What you need to make lasagna sheets at home
All you need to make the perfect lasagna sheets at home is three ingredients. Yes, you read that right – only three ingredients! And I bet you already have them at home! Let's see what they are:
All Purpose Flour:All we need for this recipe is plain all-purpose flour. Semolina flour is another flour that's widely used, but I wanted to make sure this recipe was something anyone and everyone could make! Because semolina is sometimes difficult to get hold of, and we usually don't have it in the pantry at home.
Owner:Whole eggs bring it all together to give you a perfectly cooked fresh pasta batter. The moisture and protein from the eggs help form gluten strands, which give the pasta its texture and firmness. This is what happens when we knead the dough. Eggs also add pasta fat, which enriches the dough and gives it a smooth, silky finish.
Salt:Salt is all we need to add some flavor to the pasta dough, because the rest comes from the perfect combination of flour and eggs.
How to make lasagna pasta at home
Making these lasagna pasta by hand is easier than you think! All you need is onerolling pin, a sharp knife and a clean work surface to make it. Let's see step by step how to make lasagna sheets at home:
First, take a large bowl and mix flour and salt in it.
Next, make a small indentation in the center and crack the eggs into it. Mix everything together with a fork or by hand.
When all the ingredients come together and bind together, start kneading. You need to knead this dough for at least three minutes.
Depending on the flour you use, you may need to add more flour, in this case a tablespoon at a time. If your batter is too dry, add a tablespoon or two of water. In either case, the dough should hold together and not stick.
After kneading the dough, cover it withplastic wrapand let it rest for 30 minutes.
Once it has rested, you will notice that the dough has a softer texture and is now ready to roll out. Keep some extra flour on the side for dusting.
Halve the dough, roll out one half thinly. You should be able to almost see your fingers through it.
Now cut the rolled out dough into the desired plate size or shape or according to the baking pan available to you. You can also use the fresh pasta dough for other types of pasta, including spaghetti, fettuccini, tortellini, ravioli, etc.
After unrolling the sheets, let them dry for half an hour.
Now it's time to cook them! Boil enough water in a saucepan to cover the pasta sheets. Season the water with salt and place the lasagne sheets in the boiling hot water. Let cook for 5 minutes.
When you're done, drain the lasagna sheets and now you can use them to make your favorite lasagna dish!

How do I use this recipe with a pasta roller?
I made this recipe so you can easily hand-roll it, but if you have a pasta roller, you can use that for this recipe too!
After letting your dough rest, cut it into 4 pieces.
Next, use your palm to flatten the small piece of dough into an oval about the width of your pasta machine, almost 6 inches wide.
Now set the rollers to their widest setting and feed the dough through. Then place the dough on your lightly floured work surface and press it neatly in half so that it's the same width as the pasta machine again.
Feed the pasta dough off the roller again at the widest setting. Think of these initial sets as an extended kneading process.
Continue to fold the dough in thirds and roll through the machine until silky, smooth, and even in texture. Remember to start with the widest setting and decrease the thickness setting with each pass until you reach the desired thickness.
When they are done and rolled out, cut them into even strips and continue the recipe by letting them sit for 30 minutes and then start cooking.
You'll end up with the tastiest lasagne sheets, whether you roll them by hand or with a pasta machine.
